Grilled Tikka Masala Skewers with Peppers and Rice🐔
This easy grilled Chicken Tikka Masala brings together smoky grilled chicken, charred peppers and onions, and a rich tikka masala sauce served over fluffy jasmine rice. It’s a simple backyard twist on a classic dish—perfect for the grill and packed with flavor.
Ingredients
For the Chicken & Veggies
- 1 lb chicken breast or thighs, cut into bite-sized chunks
- 1 green bell pepper, chopped
- 1 yellow onion, chopped
- Salt and black pepper, to taste
- Olive oil spray
For the Sauce
- 1 jar tikka masala sauce
For the Rice
- 1 cup jasmine rice
- 1 1/2 cups water
- 1/2 tablespoon butter
For Garnish
- Chopped green onions
Equipment
- Charcoal grill (Kamado Joe or Weber Kettle)
- Grill basket
- Skewers
- Skillet or saucepan(good non-toxic option)
Directions
1. Preheat the Grill
Heat your charcoal grill to around 400°F for direct cooking.
2. Prepare the Chicken & Veggies
Thread the chicken pieces onto skewers. Lightly spray with olive oil and season with salt and pepper.
Place chopped peppers and onions into a grill basket. Lightly spray with olive oil and toss to coat.
3. Cook the Rice
In a small pot, bring 1 1/2 cups of water to a boil. Add jasmine rice and butter. Stir once, cover, and reduce heat to low. Cook for about 10 minutes, then remove from heat and let it steam.
4. Grill Everything
Place both the skewers and grill basket on the hot grill.
Cook chicken skewers, turning every few minutes, until nicely charred and the internal temperature reaches 155–160°F (it will finish cooking in the sauce).
Stir the vegetables occasionally until softened and lightly charred.
5. Simmer in Tikka Masala Sauce
Remove chicken and vegetables from the grill.
In a skillet, combine the tikka masala sauce with the grilled chicken and veggies. Simmer over low heat for about 8–10 minutes so everything absorbs the flavor and finishes cooking.
6. Serve
Spoon jasmine rice into bowls, top with the chicken and veggie tikka masala mixture, and garnish with chopped green onions.
