Serves: 4 Prep Time: 15 minutes (+ marinating) Cook Time: 12-16 minutes Ingredients 1½ pounds boneless, skinless chicken breasts 3 tablespoons extra virgin olive oil Juice of 1 lemon Zest of 1 lemon 1 tablespoon of your favorite lemon pepper seasoning(Lawrey's, Kinder's, etc) 3 cloves garlic minced (Optional) 2 tablespoons of fresh herbs(rosemary, thyme, parsley) ½ teaspoon kosher salt (omit or reduce if your lemon pepper seasoning is salty) ½ teaspoon ground pepper Fresh parsley, chopped (for garnish) Lemon wedges (for serving) Equipment Charcoal grill such as a Weber Go-Anywhere , Weber Kettle or a Kamado Joe Instant-read thermometer Tongs Directions 1. Ingredients 2 lb London Broil (about 1½ inches thick) Traeger Saskatchewan Rub Extra Virgin Olive Oil Avocado Oil Equipment Kamado grill such as a Kamado Joe or Big Green Egg or a charcoal grill that can be set to 250° for indirect cooking Meat thermometer 12-inch cast iron skillet (Optional) Coleman propane camping stove or something similar Tongs Directions Day Before (Optional but Highly Recommended) Pat the London Broil dry with paper towels. Lightly coat all sides with olive oil. Season generously with Traeger Saskatchewan Rub. Place the steak on a plate and refrigerate uncovered overnight. Cooking Day Preheat your grill to 250°F for indirect cooking. Place the London Broil on the grill and cook until the internal temperature reaches 115-120°F. Remove the steak from the grill. Ingredients 2 red snapper fillets (6-8 oz each) Traeger Blackened Saskatchewan Rub 2 tbsp butter Oil, oil spray, or melted butter 1/2 lemon Equipment 12" cast iron skillet Outdoor propane stove (optional) Directions Pat the red snapper fillets dry with paper towels. Brush both sides lightly with oil or melted butter. Season generously with Traeger Blackened Saskatchewan Rub. Heat a cast iron skillet over medium-high heat. I like to use an outdoor propane stove to avoid smoking up the house. Add the butter to the skillet. Once the butter has melted and coated the skillet, carefully place the fillets in the pan. Cook for 3-4 minutes per side, depending on thickness, until the fish flakes easily with a fork or reaches 135-140°F. Remove from the skillet and squeeze fresh lemon juice over the fillets.
