- 1/2 lemon

- 1½ heads romaine lettuce, chopped

Prepare the salad by placing the chopped romaine, parmesan cheese, and a few cracks of fresh black pepper in a large salad bowl. Refrigerate while you cook the fish.

Pat the mahi mahi filets dry with paper towels. Lightly coat both sides with olive oil, oil spray, or melted butter. Generously season all sides with the blackening rub.

Heat a 12-inch cast iron skillet over medium-high heat. Cast iron can produce a good amount of smoke when blackening fish, so cooking outdoors on a propane burner is a great option if available.

Add the butter to the hot skillet. Once melted and coating the surface of the pan, carefully place the mahi filets in the skillet.

Cook for 4–5 minutes on the first side without moving them. Flip and continue cooking until the fish reaches an internal temperature of 140°F–145°F and flakes easily with a fork.
