Easy Grilled Lemon Pepper Chicken Breasts

Ingredients

  • 1½ pounds boneless, skinless chicken breasts
  • 3 tablespoons extra virgin olive oil
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 1 tablespoon of your favorite lemon pepper seasoning(Lawrey's, Kinder's, etc)
  • 3 cloves garlic minced
  • (Optional) 2 tablespoons of fresh herbs(rosemary, thyme, parsley)
  • ½ teaspoon kosher salt (omit or reduce if your lemon pepper seasoning is salty)
  • ½ teaspoon ground pepper
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

1. Prepare the Chicken
If the chicken breasts are thick, pound them to an even thickness of about ¾ inch. This helps them cook evenly and stay juicy.

2. Make the Marinade
In a large bowl, whisk together:

  • 3 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • Zest of 1 lemon
  • 1 tablespoon Lemon Pepper Seasoning
  • 3 garlic cloves minced
  • ½ teaspoon kosher salt(optional)
  • 2 tablespoons fresh herbs(optional)

3. Marinate
Save a little of the marinade to drizzle over cooked chicken before eating. Add the remaining marinade to the chicken breasts and coat evenly. Cover and refrigerate for at least 30 minutes or up to 4 hours.

4. Preheat the Grill
Prepare your charcoal grill for direct cooking at approximately 400°F.

5. Grill the Chicken
Place the chicken on the grill and cook for about 7-10 minutes per side, flipping once, until the internal temperature reaches 160°F.

6. Rest and Serve
Remove the chicken from the grill and let it rest for 5 minutes. The temperature will rise to 165°F as it rests.

Squeeze fresh lemon juice and drizzle reserved marinade over the chicken and garnish with chopped parsley before serving.

Tips & Information

  • Avoid marinating longer than 4 hours, as the lemon juice can affect the texture of the chicken.
  • A small chunk of apple or cherry wood adds a subtle smoky flavor that pairs beautifully with lemon pepper.
  • This chicken goes great with grilled asparagus, grilled sweet potatoes, garlic mashed potatoes, rice pilaf, or a Caesar salad.
  • For extra flavor, finish with an additional sprinkle of lemon pepper seasoning right after the chicken comes off the grill.

Optional Lemon Butter Finish

  • 2 tablespoons melted butter
  • 1 teaspoon fresh lemon juice
  • ½ teaspoon lemon pepper seasoning

Whisk together and brush over the chicken just before serving for an extra layer of lemony, buttery goodness.

Tip: Slice the chicken and serve it over cilantro lime rice, in wraps, or on top of a Caesar salad for easy leftovers the next day. 🍋🔥🐔
