Feta and Herb Crusted Salmon
This Feta Herb Crusted Salmon is an easy, flavorful dinner that comes together in under 30 minutes. Fresh parsley, chives, garlic, and tangy feta create a delicious crust that pairs perfectly with the rich salmon. Finished with fresh lemon juice, it's light, fresh, and packed with flavor.
Ingredients
- 12 oz salmon (2 filets, about 6 oz each)
- 1/3 cup feta cheese crumbles
- 1/4 cup fresh parsley, finely chopped
- 2 tbsp fresh chives, chopped
- 1 tbsp lemon zest
- 1/4 tsp ground black pepper
- 1/4 tsp salt
- 3 garlic cloves, minced
- 1 lemon, cut in half
- Olive oil spray or 1 tbsp olive oil
Instructions

Preheat your oven or grill to 400°F.

In a small bowl, combine the feta cheese, parsley, chives, garlic, lemon zest, salt, and pepper. Mix until well combined.

Lightly coat a baking dish or grill-safe pan with olive oil. Place the salmon filets on the pan and lightly brush or spray the tops with olive oil.

Evenly spread the feta herb mixture over the salmon filets, gently pressing it down so it adheres to the fish. Squeeze the juice from half of the lemon over the tops.

Bake or grill for 17-20 minutes, or until the salmon reaches an internal temperature of 145°F and flakes easily with a fork.

Remove from the oven or grill and immediately squeeze the remaining lemon half over the salmon.
