Thai Noodles with Shrimp 🦐
These Thai-inspired noodles are packed with bold flavors from soy sauce, fish sauce, garlic, lime, and sriracha. Tossed with tender shrimp, fresh peppers, crunchy peanuts, and your favorite noodles, this easy weeknight meal comes together in about 30 minutes and delivers the perfect balance of savory, spicy, tangy, and crunchy.
Ingredients
For the Sauce
- 3 tbsp soy sauce
- 3 tbsp fish sauce
- 1 tbsp sriracha (more if you like extra heat)
- 1 tbsp fresh lime juice
- 2 cloves garlic, minced
For the Noodles
- 8 oz spaghetti (or your favorite noodles)
- 3 tbsp oil (avocado, vegetable, or extra virgin olive oil)
- 1 lb shrimp, peeled and deveined
- 2–3 jalapeños, thinly sliced
- 1 cup sweet peppers or bell peppers, thinly sliced
- 1/2 cup crushed peanuts
- Juice of 1 lime
- Sliced green onions, for garnish
Directions

In a small bowl, whisk together the soy sauce, fish sauce, sriracha, lime juice, and minced garlic. Set aside.

Cook the noodles according to the package directions. Drain and set aside.

Heat 1½ tablespoons of oil in a large skillet over medium heat. Add the shrimp and cook for 2–3 minutes per side, or until pink and fully cooked. Remove the shrimp from the skillet and set aside.

Add the remaining 1½ tablespoons of oil to the skillet. Add the jalapeños and peppers and cook for 4–5 minutes, stirring occasionally, until softened but still slightly crisp.

Reduce the heat to low. Add the cooked noodles, shrimp, and prepared sauce to the skillet. Toss everything together until the noodles are evenly coated.

Stir in the crushed peanuts and squeeze the juice of one lime over the noodles. Toss one final time.

Garnish with sliced green onions and additional peanuts if desired.
