Ingredients

For the Chicken

  • Traeger Blackened Saskatchewan Rub (or salt and pepper)
  • Olive oil spray
  • Buffalo sauce, to taste

For the Wraps

  • 1 head romaine lettuce, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 4 pieces thick-cut bacon
  • Ranch dressing or blue cheese dressing
  • 4 large wraps or tortillas

Equipment

  • Skewers
  • Baking sheet

Directions

  1. Preheat your oven and charcoal grill to 400°F.

  2. Place the bacon on a baking sheet and bake for 18-20 minutes, flipping halfway through, until crispy.

  3. While the bacon cooks, chop the romaine and add it to a large bowl with the cherry tomatoes and red onion.

  4. Thread the diced chicken onto skewers. Lightly spray with olive oil and season with Traeger Blackened Saskatchewan Rub or simply salt and pepper.

  5. Place the skewers on the grill and cook until the chicken reaches an internal temperature of 165°F, rotating every 2-3 minutes for even cooking.

  7. Remove the chicken from the grill and let it rest for about 5 minutes. Remove the chicken from the skewers, place it in a bowl, and toss with your favorite buffalo sauce.

  8. Toss the salad with ranch or blue cheese dressing. Fill each wrap with the dressed salad, crispy bacon, and buffalo chicken. Roll tightly and serve.
