Energy Balls(No Bake)

 

These No-Bake Peanut Butter Energy Bites are one of our favorite grab-and-go snacks. They're packed with oats, peanut butter, flaxseed, and chia seeds for plenty of fiber and healthy fats, while mini chocolate chips add just the right amount of sweetness. They're easy to make, require no baking, and are perfect for breakfast, meal prep, or an afternoon pick-me-up.

Ingredients

  • 4 cups old-fashioned oats
  • 2 cups peanut butter
  • 2 cups milled flaxseed
  • 2/3 cup honey
  • 2/3 cup mini chocolate chips
  • 4 tablespoons chia seeds
  • 1 tablespoon vanilla extract

Directions

  1. Add the oats, peanut butter, flaxseed, honey, chocolate chips, chia seeds, and vanilla extract to a large mixing bowl.

  2. Stir until all of the ingredients are evenly combined. The mixture should be thick and slightly sticky.

  3. Cover the bowl and refrigerate for at least 30 minutes. This helps the mixture firm up and makes it easier to roll.

  4. Roll the mixture into bite-sized balls, about 1 to 1½ inches in diameter.

  5. Store in an airtight container in the refrigerator and enjoy whenever you need a quick snack.

Tips & Information

  • If the mixture seems too dry, add an extra tablespoon or two of honey or peanut butter.
  • If it's too sticky, stir in a few more oats.
  • For easy portioning, use a small cookie scoop.
