Easy Jungle Bird Cocktail Recipe
The Jungle Bird is a tropical tiki cocktail that perfectly balances sweet, bitter, and tart flavors. Made with Appleton Estate Signature Blend Rum, Campari, pineapple juice, and lime juice, this refreshing cocktail has become one of our favorite summer drinks.

Ingredients
- 1½ oz Appleton Estate Signature Blend Rum
- ½ oz Campari
- 1½ oz pineapple juice
- ½ oz lime juice
- ½ oz simple syrup
- Ice cubes
Optional Garnish
- Pineapple wedge
- Lime wheel
- Fresh pineapple leaves
Equipment
- Cocktail shaker and 2 oz jigger
- Rocks glass or tiki glass
Instructions
- Fill a cocktail shaker about two-thirds full with ice.
- Add the rum, Campari, pineapple juice, lime juice, and simple syrup.
- Shake vigorously for 15–30 seconds until well chilled.
- Fill a rocks glass with fresh ice.
- Strain the cocktail over the ice.
- Garnish with a pineapple wedge, lime wheel, or fresh pineapple leaves if desired.
- Serve immediately and enjoy!
Tips
- Bottled lime juice or fresh are both great in it, same with pineapple juice.
- Shake for about 20 seconds to slightly dilute the cocktail and create a little foam.
- Sometimes I do 3/4 oz Campari if I want it a little more bitter, it's great both ways.
Variations
Darker Rum: Substitute a dark Jamaican rum for a richer, deeper flavor. We've tried a few different rums but keep going back to Appleton Estates. DO NOT TRY CRUZAN BLACK STRAP RUM with this cocktail(or probably any cocktail) unless you really love the taste of molasses. It was WAY TOO overwhelming.
