Grilled Jerk Chicken Kabobs

 

These Grilled Jerk Chicken Kabobs are loaded with juicy chicken, sweet pineapple, and colorful vegetables, all seasoned with bold Jamaican jerk flavors. Served over cilantro lime rice, this easy recipe brings a taste of the Caribbean right to your backyard.

Ingredients

For the Kabobs

  • 1 lb boneless, skinless chicken breast, cut into 1-inch cubes
  • 1 green bell pepper, cut into bite-sized pieces
  • 2/3 cup pineapple chunks
  • 2/3 cup cherry tomatoes
  • 2/3 cup red onion, cut into chunks
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lime juice
  • 2–3 tbsp Dizzy Pig Jamaican Firewalk Jerk Seasoning (or your favorite jerk seasoning)

For the Rice

  • 1 package Vigo Cilantro Lime Rice (or homemade cilantro lime rice)
  • 1 tbsp butter

1. Prepare the Ingredients

Cut the chicken, bell pepper, and red onion into bite-sized pieces. Set the vegetables and pineapple aside.

2. Marinate the Chicken

In a large bowl, combine the chicken, olive oil, lime juice, and jerk seasoning. Mix until the chicken is evenly coated. Cover and refrigerate for at least 30 minutes. For even more flavor, marinate for up to 4 hours.

3. Assemble the Kabobs

Thread the chicken, pineapple, green pepper, red onion, and cherry tomatoes onto skewers, alternating ingredients for a colorful presentation.

4. Preheat the Grill

Prepare your charcoal grill for medium-high heat, approximately 400°F.

5. Cook the Rice

Prepare the Vigo Cilantro Lime Rice according to the package directions. Stir in 1 tablespoon of butter for extra richness and keep warm.

6. Grill the Kabobs

Place the kabobs on the grill and cook for 10–12 minutes, turning every 2–3 minutes to cook evenly on all sides. Grill until the chicken reaches an internal temperature of 160°F. Remove from the grill and let rest for 3–5 minutes; carryover cooking will bring the chicken to a safe 165°F.

7. Serve

Pile the cilantro lime rice into bowls and top with the grilled jerk chicken kabobs. Serve with extra lime wedges if desired and enjoy!
