Ingredients
For the Gochujang Sauce
- 1/4 cup gochujang paste
- 2 tbsp soy sauce
- 2 tbsp sesame oil
- 1 tsp honey
- Juice from 1/2 lime (about 1 tbsp)
- 3 garlic cloves, minced
For the Noodles
- 8 oz spaghetti (or your favorite noodle)
- 1 tbsp olive oil
- 1/3 cup sliced green bell pepper
- 1/3 cup sliced red bell pepper
- 1/3 cup sliced yellow or orange bell pepper
- 1 jalapeño, thinly sliced
- 1/3 cup crushed peanuts
- Chopped green onions, for garnish
- Sesame seeds, for garnish
For the Scallops
- 1 lb bay scallops
- Traeger Blackened Saskatchewan Rub (or your favorite blackening seasoning)
Instructions

In a small bowl, combine the gochujang paste, soy sauce, sesame oil, honey, lime juice, and minced garlic. Mix until smooth and set aside.

Cook the spaghetti according to the package directions. Drain and set aside.

Pat the scallops dry with paper towels and season generously with the blackening rub.

Heat a large skillet over medium-high heat. Cook the scallops for 2–3 minutes, stirring occasionally, until cooked through and lightly browned. Remove from the skillet and set aside.

Reduce the heat to medium and add the olive oil. Cook the bell peppers and jalapeño for 4–5 minutes, or until softened but still slightly crisp.
