Reverse Seared London Broil on the Kamado
Reverse Seared London Broil on a Charcoal Grill
Ingredients
- 2-pound London Broil (about 1½ inches thick)
- Traeger Blackened Saskatchewan Rub or your favorite steak seasoning
- Extra virgin olive oil
- 1-2 teaspoons avocado oil (for searing)
Equipment
- Kamado grill (Kamado Joe, Big Green Egg, Grill Dome, etc.) or any charcoal grill set up for indirect cooking
- Meat thermometer
- 12-inch cast iron skillet
- (Optional) Coleman propane camping stove or another outdoor burner
- Tongs
Directions
Optional Overnight Dry Brine (Highly Recommended)
- Pat the London Broil dry with paper towels.
- Lightly coat all sides with olive oil.
- Season generously with Traeger Blackened Saskatchewan Rub.
- Place the steak on a plate or wire rack and refrigerate uncovered overnight.
Dry brining gives the salt time to penetrate the meat, helping create deeper flavor and an even better crust.
Reverse Sear
- Preheat your charcoal grill to 250°F for indirect cooking.
- Place the London Broil on the grill and cook until it reaches an internal temperature of 115-120°F.
- Remove the steak from the grill.
Cast Iron Sear
- Heat a cast iron skillet over high heat until it's just beginning to smoke. I like using a Coleman camping stove outdoors because it gets extremely hot and keeps the house from filling with smoke.
- Add 1-2 teaspoons of avocado oil.
- Sear the steak for about 1 minute per side, flipping every 30 seconds for an even crust.
- Remove the steak when it reaches 125-130°F for medium-rare.
Rest and Serve
Let the steak rest for 5-10 minutes, then slice it thinly against the grain before serving.
Tips for the Best Reverse Seared London Broil
- Use a meat thermometer. London Broil can become tough if overcooked.
- Slice against the grain. This is the biggest secret to making London Broil tender.
- Dry brine overnight whenever possible for deeper flavor and improved texture.
- Use a blazing hot cast iron skillet to create a restaurant-quality crust in about two minutes.
- Cook outdoors if possible to avoid smoke inside your house.

Final Thoughts
London Broil is one of the most underrated cuts of beef for grilling. While it isn't as naturally tender as premium steaks like ribeye or strip steak, the reverse sear method transforms it into an incredibly juicy, flavorful meal with an amazing crust.
If you're looking for a budget-friendly steak recipe that tastes like it came from a steakhouse, this reverse seared London Broil deserves a spot in your grilling rotation.
