Ingredients
For the Gochujang Sauce
- 1/4 cup gochujang paste
- 2 tablespoons soy sauce
- 2 tablespoons sesame oil

- 3 garlic cloves, minced

- 8 ounces spaghetti (or your favorite noodles)

- 1 jalapeño, thinly sliced
- 1/3 cup crushed peanuts

For the Shrimp
- 1 pound large shrimp, peeled and deveined
- 1 tablespoon blackening seasoning(Traeger Blackened Saskatchewan Rub is my favorite. I use it on burgers, steak, seafood and chicken because it has incredible flavor)
- Large pot to boil noodles
- Large stainless steel skillet
Instructions
1. Make the Sauce
In a small bowl, whisk together the gochujang paste, soy sauce, sesame oil, honey, lime juice, and minced garlic until smooth. Set aside.
2. Cook the Noodles
Cook the spaghetti according to the package directions until al dente. Drain and set aside.
3. Season the Shrimp
Pat the shrimp dry with paper towels and season generously on both sides with the blackened seasoning.
4. Cook the Shrimp
Heat a large skillet over medium heat.
Add 1 tbsp oil then cook the shrimp, turning every 1-2 minutes until they turn pink and are cooked through. Be careful not to overcook them.
Transfer shrimp to a plate.
5. Cook the Vegetables
Add 1 tbsp oil, then cook the bell peppers and jalapeño for about 4–5 minutes, until slightly softened while still maintaining a little crunch.
6. Add the Sauce
Pour the gochujang sauce into the skillet.
Cook for about 30 seconds, stirring constantly until fragrant then turn skillet to low.
7. Toss Everything Together
Add the cooked noodles and toss until evenly coated with the sauce.
Return the shrimp to the skillet and gently toss everything together.
Stir in the crushed peanuts.
8. Garnish and Serve
Top with sliced green onions, sesame seeds, and an extra squeeze of fresh lime juice if desired.
Serve immediately.
