Ancho Chile Taco Seasoning Recipe (Easy & Customizable)
Skip the store-bought packets and make your own taco seasoning at home with ancho chile powder for a smoky, slightly sweet depth you won't get from regular chili powder. This blend comes together in minutes, and it's easy to customize the heat level to your taste.

Ingredients
- 2 tbsp ancho chile powder
- 1 tbsp ground cumin
- 1 tbsp smoked paprika
- 2 tsp garlic powder
- 2 tsp onion powder
- 1 tsp kosher salt
- 1 tsp black pepper
- 1/2 tsp dried oregano
- 1/4–1/2 tsp cayenne (adjust to taste for heat)
- 1/4 tsp ground coriander (optional, adds brightness)
Instructions
- Combine all ingredients in a small bowl and whisk until evenly mixed.
- Store in an airtight container in a cool, dark place for up to 6 months.
- To use, mix 2 tbsp with 1 lb ground beef, turkey, or chicken while cooking, along with 2–3 tbsp water to help it coat and simmer into the meat. Also, works great as a rub on chicken, fish, shrimp, etc. and it's one of my favorite seasonings for chicken wings.
Notes
- Ancho chile powder is milder and smokier/sweeter than regular chili powder, giving this blend a deeper, more rounded flavor.
- For more heat, increase the cayenne or add a pinch of chipotle powder.
- For a brighter finish, add fresh lime zest right before cooking.
