Grilled Cilantro Lime Chicken Recipe (Easy & Juicy!)

 


This Grilled Cilantro Lime Chicken is one of our favorite easy grilling recipes. Fresh lime juice, garlic, and cilantro create a bright, zesty marinade that keeps the chicken tender and packed with flavor. It's perfect for tacos, rice bowls, salads, or served alongside grilled vegetables.

Ingredients

For the Chicken

  • 2 lbs boneless, skinless chicken breasts or chicken thighs
  • 2 tbsp extra virgin olive oil
  • Juice of 2 limes
  • Zest of 1 lime (optional for extra flavor)
  • 4 garlic cloves, minced
  • ¼ cup fresh cilantro, chopped
  • 1 tsp salt
  • ½ tsp ground black pepper
  • ½ tsp cumin (optional)
  • ½ tsp chili powder (optional)

Equipment

  • Charcoal grill such as a Weber Go-Anywhere Grill, Weber Jumbo Joe, or Kamado Joe
  • Mixing bowl or resealable bag
  • Meat thermometer
  • Tongs

Directions

1. Prepare the Marinade

In a bowl, whisk together the olive oil, lime juice, garlic, cilantro, salt, pepper, and optional seasonings.

2. Marinate the Chicken

Add the chicken to the marinade and coat evenly. Cover and refrigerate for at least 30 minutes. For even more flavor, marinate for 2-4 hours.

3. Preheat the Grill

Heat your grill to approximately 400°F for direct cooking.

4. Grill the Chicken

Place the chicken on the grill and cook for about 5-7 minutes per side, depending on thickness. Grill until the internal temperature reaches 160°F.

5. Rest and Serve

Remove the chicken from the grill and let it rest for 5 minutes. The temperature will continue rising to a safe 165°F while the juices redistribute.

Serve with fresh lime wedges and garnish with additional chopped cilantro if desired.
