Cook Time: 15 minutes
Rest Time: 10 minutes
Total Time: 35 minutes
Servings: 4
Ingredients
1 cup jasmine rice
1½ cups chicken broth (or water)
1 tablespoon butter or olive oil
1 garlic clove, minced (optional)
Juice of 1 lime (about 2 tablespoons)
Zest of 1 lime (optional, but recommended)
¼-½ cup chopped fresh cilantro
½ teaspoon kosher salt (if using water; reduce if using broth)
Equipment
Medium saucepan with lid
Fork
Instructions
Rinse the jasmine rice under cold water until the water runs mostly clear.
In a medium saucepan, melt the butter over medium heat. If using garlic, cook it for about 30 seconds until fragrant.
Add the rice and stir for about 1 minute to lightly toast the grains.
Pour in the chicken broth and bring to a boil.
Reduce the heat to low, cover, and cook for about 15 minutes, or until the liquid has been absorbed.
Remove the pan from the heat and let the rice rest, covered, for 10 minutes.
Fluff the rice with a fork.
Stir in the chopped cilantro, lime juice, and lime zest. Taste and adjust with additional salt or another squeeze of fresh lime if desired.
Serve immediately.
Tips
Fresh lime juice makes a huge difference compared to bottled juice.
Chicken broth gives the rice more flavor, but water works perfectly if you want a lighter side dish.
Rinsing the rice is worth the extra minute and helps create fluffy, separate grains.
Add the cilantro after cooking to keep it bright and fresh.
This recipe reheats well for meal prep and leftovers.
Optional Add-Ins
Chopped green onions
A pinch of ground cumin
Finely diced jalapeño
Crumbled cotija cheese
Diced avocado just before serving
