Grilled Jerk Chicken Fajitas
Easy Caribbean-Inspired Chicken Fajitas with Peppers, Chipotle Mayo & Guacamole
Bring a little Caribbean flavor to taco night with these easy Grilled Jerk Chicken Fajitas. Juicy grilled chicken is seasoned with Walkerswood Jerk Seasoning, then served with charred bell peppers, sweet red onion, warm flour tortillas, creamy chipotle mayo, and fresh homemade guacamole. They're smoky, spicy, colorful, and perfect for weeknight dinners or backyard cookouts.

Ingredients
For the Chicken
- 1½ pounds boneless, skinless chicken breasts(pounded thin or cut thin)
- 2-3 tablespoons Walkerswood Jerk Seasoning (or to taste)
For the Vegetables
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 large red onion, sliced
- 1 tablespoon olive oil
- Salt and pepper, to taste
For Serving
- 8 flour tortillas
- Chipotle Mayo (see our recipe)
- Homemade Guacamole (recipe below)
- Fresh cilantro (optional)
- Lime wedges
Directions

Preheat your charcoal or gas grill to 400°.

Season chicken generously with Walkerswood Jerk Seasoning and let marinade for at least 30 minutes

Toss the sliced peppers and onion with olive oil, salt, and pepper.

Grill the chicken for 6-8 minutes per side, or until the internal temperature reaches 160°F.

While the chicken cooks, grill the peppers and onions in a grill basket for about 10-15 minutes, stirring occasionally, until they're tender with a little char.

Remove the chicken and let it rest for 5 minutes before slicing into thin strips.

Warm the tortillas on the grill for about 20-30 seconds per side.

Fill each tortilla with sliced jerk chicken, grilled peppers and onions, a generous drizzle of Chipotle Mayo, and a scoop of fresh guacamole.

Garnish with cilantro and serve with fresh lime wedges.
Easy No-Tomato Guacamole
Ingredients
- 2 ripe avocados
- 2 tablespoons finely diced red onion
- 1 small jalapeño, finely minced (remove seeds for less heat)
- 1 garlic clove, minced
- Juice of 1 lime
- 2 tablespoons chopped fresh cilantro
- ½ teaspoon salt(preferably coarse salt)
- ¼ teaspoon black pepper
Directions
- Scoop the avocados into a bowl.
- Mash until mostly smooth with a few small chunks remaining.
- Stir in the onion, jalapeño, garlic, cilantro, lime juice, salt, and pepper.
- Taste and add more lime juice or salt if needed.
- Serve immediately.
Tips
- Chicken thighs also work great and stay extra juicy.
- Grill the vegetables until they have a little char for the best flavor.
- Warm tortillas directly over the grill for a lightly toasted texture.
- Pair these fajitas with our homemade Chipotle Mayo and fresh guacamole for the ultimate combination.
- Leftovers make fantastic rice bowls or salads the next day.
