Ingredients
- 3–4 lb chuck roast
- 1 packet ranch seasoning mix
- 1 packet au jus gravy mix
- 8–10 pepperoncini peppers
- ¼ cup pepperoncini juice
- 1 large onion, sliced
- 1-2 cups celery, chopped into large pieces
- 3 carrots, peeled and cut into chunks or 1 pound baby carrots
- 1 tbsp olive oil (optional, for searing)
- Fresh parsley, chopped (optional)
For Serving
- Easy Mashed Potatoes
- Crusty bread
- Green beans or a side salad
Equipment
- 6-8 quart slow cooker
- Large skillet (optional for searing)
- Tongs
- Forks for shredding
Directions
1. Optional: Sear the Roast
Heat olive oil in a large skillet over medium-high heat.
Season the chuck roast lightly with black pepper and sear for about 3–4 minutes per side until nicely browned.
This step adds extra flavor but can be skipped if you're short on time.
2. Build the Slow Cooker
Add the onions, celery, and carrots to the bottom of the slow cooker.
Place the roast on top.
Sprinkle the ranch seasoning and au jus mix evenly over the roast.
Add the pepperoncini peppers and pour in the pepperoncini juice.
3. Slow Cook
Cook:
- Low: 8–9 hours (recommended)
- High: 5–6 hours
The roast is ready when it easily pulls apart with a fork.
4. Shred
Remove any large pieces of fat.
Lightly shred the beef(leaving some medium chunks) directly in the slow cooker and mix it into the flavorful juices.
5. Serve
Spoon the Mississippi Pot Roast over a bed of creamy mashed potatoes and top with plenty of the vegetables and cooking juices.
Garnish with fresh parsley if desired.
Tips
- Chuck roast gives the best shreddable texture.
- Pepperoncini peppers add tangy flavor, not much heat.
- If you like a little spice, add a few extra peppers or a splash more pepperoncini juice.
- Be careful adding too much juice if serving over mashed potatoes because it can get soupy
- Leftovers are excellent in sandwiches, tacos, or over rice.
Storage
Store leftovers in an airtight container in the refrigerator for up to 4 days.
Freeze for up to 3 months.
