Honey Soy Roasted Brussels Sprouts and Sweet Potatoes

Honey Soy Roasted Brussels Sprouts and Sweet Potatoes

Prep: 15 minutes | Cook: 25 minutes | Total: 40 minutes | Serves: 4

Ingredients

Vegetables

  • 1 pound Brussels sprouts, trimmed and halved
  • 2 medium sweet potatoes, diced into about 3/4-inch pieces
  • 2 tablespoons olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • Sesame seeds

Honey Soy Sauce

  • 2 tablespoons honey
  • 2 tablespoons low sodium soy sauce
  • 1 tablespoon rice vinegar
  • 2 garlic cloves, minced
  • ¼-½ teaspoon fried chili paste or red pepper flakes (optional, for spice)

Instructions

  1. Preheat your oven to 425°F.
  2. Toss the Brussels sprouts and sweet potatoes with the olive oil, salt, and pepper on a large sheet pan.
  3. Turn the Brussels sprouts cut side down and spread everything out in a single layer.
  4. Bake for 25 minutes, until the sprouts are browned and the sweet potatoes are tender.
  5. While they bake, whisk the honey, soy sauce, rice vinegar, garlic and chili paste (if using) in a small bowl.
  6. Move the hot vegetables to a large bowl, pour the sauce over, and toss to coat. Sprinkle with sesame seeds and serve right away.

Notes

  • Don't crowd the pan. If the vegetables are piled up, they'll steam instead of roast, so use two pans if you need to.
  • Cut the sweet potatoes about the same size as the halved sprouts so they finish together.
  • Toss in the sauce while the vegetables are still hot so they soak it up.

FAQs

Why do you roast Brussels sprouts cut side down?
The flat side makes full contact with the hot pan, which gives it a crispy, caramelized surface.

Can I make this ahead?
Yes. Roast the vegetables and store them without the sauce. Reheat in a 400°F oven or air fryer for 8 to 10 minutes, then toss with the sauce.

Can I use frozen Brussels sprouts?
I don't recommend it. They release a lot of water and turn out soft instead of crispy.

What does this go well with?
Grilled chicken, pork chops, salmon, or a good steak.
